Foodie Find: Flightz in El Dorado Hills

Flightz  //  In the mood for some yummy artisan food with a side of vino, I recently flew into El Dorado Hills’ newest and aptly named wine pub, Flightz. Serving local wines (including flights from Crystal Basin Cellars, Holly’s Hill Vineyards, C.G. Di Arie Vineyard and Winery, and Jodar Vineyards) and a handful of local beers, in addition to an impressive-looking cheese board and other “Food Flightz,” it’s a perfect place to gather with gal pals or wine and dine with your special someone. On my last visit, I was looking for something substantial and savory, and the Flightz Fish and Chips immediately caught my eye. Featuring tempura-battered salmon, as opposed to the customary white fish—with your choice of two or three pieces—and served with a side of coleslaw drizzled in pancetta-vinaigrette along with thinly cut waffle fries, it was a creative (and tasty) version of this comfort food favorite. The salmon had a crunchy exterior with a moist interior, and melted in my mouth with every bite. To pack in even more flavor, I rounded off the dish with the eatery’s lime juice-spiked jalapeño-tartar sauce.
