Introducing: Chef Russ; The Hidden Table

Describe your business. Did you find it, or did it find you?
My lifelong love of cooking brought me to start The Hidden Table, a catering and personal chef service. I’ve always enjoyed preparing gourmet meals and been passionate about great food. Although I have perfected many recipes (some of which are on my website) and have 25 years of restaurant and catering experience, I really like preparing dishes that match my clients' tastes. I trained in St. Helena, Europe, and South America focusing on elegant peasant foods; although I graduated from the California Culinary Academy and had a nine-month stint at the Culinary Institute of America, I’m most proud to be a graduate of the "CAML (Cooking All My Life) Culinary School." After catering for years as an occasional side job, I decided it was time to dive into the food industry full-time and start The Hidden Table. It seemed to be the perfect match for my desire to have a small, intimate business that focuses on organic farm-to-fork food, health, and nutrition. I believe the most delicious and attractive foods are made using a variety of fresh produce, herbs, meats, fish, and whole (not processed) foods.
Why is your staff the best in the business?
All of our staff is highly skilled in food, beverage, and event planning. They love the work we do and being part of joyous events every weekend.
What life accomplishments are you most proud of?
My kids and grandkids.
