Foodie Find in Folsom El Dorado Hills: Nuby's Cafe

For the last few months, co-owners Juan Carlos and Nubia Galdamez of Nuby’s Café have been keeping the neighborhood content and full with a unique mixture of homemade Mexican and Salvadorian dishes. Tucked away in one of Folsom’s strip malls, the cafe is truly a hidden gem. But despite its newbie status, Nuby’s is quickly becoming famous for their authentic pupusas. With this in mind, I knew I had to indulge in them. After much deliberation over which variety to order (they have six to choose from!), the friendly chef finally coerced me into getting the Mixed Pupusa, featuring a thick, griddled corn cake stuffed with a blend of savory pork, melty cheese, and beans. The traditional Salvadorian dish definitely lived up to the hype, but with so many other options on the menu—tacos, quesadillas, burritos, tortas, and more—I also had to try the Carne Asada Fries. Dripping with homemade queso and loaded with juicy steak, fresh tomatoes, onions, sour cream, and cilantro, one bite was all it took to know I made the right choice. I washed all the deliciousness down with the fresh flavors of a Piña Agua Fresca and couldn't help but anticipate my order for next time.
